I have been dreaming of this bar olive this thyme and it’s finally come to fruition! This bar is crafted with beans from Kokoa Kamili in Tanzania and paired with locally cured black olives, extra toasty local almonds, and garden lemon thyme.
The fruitiness of the Tanzanian beans pairs expertly with the bright citrus-y butter-y olives and the crunch from nuts provides a welcome dance. When you get bites with olive the inclusions it’s a beautiful tango happening inside your mouth.
This round is extra special because I cured these olives last fall from olives I harvested in Healdsburg. I hope you go nuts for it!
