When you think of focaccia you think of delicious leavened flatbread soaked full of flavor from olive oil and sea salt. I channeled that vision into this bar by pairing Séka Hills olive oil with the fruity notes of cacao from Tanzania. It’s full of DAYTRIP focaccia crumbs and finished with flaky sea salt. It’s like focaccia and chocolate should always be together; it’s sweet, salty, smooth, and crunchy- Foc’ Yeah!
The addition of olive oil lends the final bar a tender and velvety texture that just means it melts in your mouth that much more easily. If you’re familiar with DAYTRIP restaurant (and if you’re not, you should be!), you know their focaccia and how good it is. I am fortunate enough to get some day old focaccia to upcycle into these bars.
